The Jell-O Proclamation
We all know that Jell-O is big in Utah, but what you might not have realized is that Jell-O is the official snack of Utah. The dessert also has it’s own official holiday in Utah, “Jell-O Week” which is outlined in the proclamation below.

How come the date of the holiday is in 2001 and the references are in 2002 etc? When was this thing signed?
